Vegan lentil paté

Both the flavour and the texture of this lentil paté remind me on the meat paté I used to eat when I was a child. It is a tasty spread over whole wheat bread either for breakfast or dinner. It is a real protein bomb.


Ingredients

240 g cooked brown lentils (80 g dry)

1 onion

1 medium carrot

1 tsp marjoram

1 tsp salt

1/4 tsp ground pepper

6-8 sprigs of fresh parsley

2-3 tbsp water


Method

  1. Dice the onion and grate the carrot. Place them in a skillet, add 2-3 tbsp water and cook them under lid until they soften.

  2. Chop the parsley, then place all the ingredients in a food processor and process until smooth.
