Vegan Chocolate-Blueberry Muffins

This is a type of sweet that we can enjoy without feeling guilty. It doesn't contain any refined sugar or oil, it is made of healthy, wholesome plant-based ingredients that replenish our bodies with energy and valuable nutrients.


I managed to achieve perfect consistency from the following ingredients. Even the next day it’s just as soft and delicious as freshly made. It is a great choice for both dessert and breakfast. Plus, it’s quick and very easy to make.


Ingredients

2 bananas (190g peeled)

120 g soft dates

60 g apple sauce

4 tbsp plant-based milk

120 g whole wheat flour

4 tbsp cacao powder

1/2 tsp sodium bicarbonate

35 g frozen blueberries


Method

1. Preheat the oven to 180°C.

2. Blend the dates, bananas, apple sauce, and plant-based milk until smooth.

3. Mix the dry ingredients in a bowl, then add the wet mixture and stir it well. Then stir in the frozen blueberries, as well.

4. Fill the silicone muffin cases with the batter and bake for 20-25 minutes.

5. Let them cool for a few minutes before you remove the cases.
