Minty Grean Pea Soup

Simple, quick, healthy, and delicious. These four words perfectly describe this recipe. :) It is extremely creamy, has a nice minty flavor, and can be done anytime within few minutes, so it can be a great option when having no time to cook.
You can eat it warm or cold. I usually use frozen peas, so I just take them out from the freezer, place them in a bowl, and pour some boiling water to cover them. If you want it cold, you can rinse them immediately, and if you prefer warm, then you can wait a few minutes until the peas get warmed up by the water.
In case you have no mint at home, you can make it whithout, however, the mint gives a very special flavor to it.
The recipe is calculated for one or two portions, depending on whether you want to eat it as a starter or as a main dish.
Ingredients (1-2 portions)
500g frozen green peas
1 cup plant-based milk (or water)
1/2 tsp salt
Pinch of ground pepper
6-8 fresh mint leaves.
Method
Place the frozen peas in a bowl and pour some boiling water on top to defrost them.
Place all the ingredients in a blender and blend until smooth and creamy. In case your blender is not strong enough to blend the skin of the peas, you can pass it through a strainer.
Serve it with plain whole wheat tortilla chips.
