Smoky Sweet Potato Chickpea Chili

This hearty meal definitely satisfies your comfort food cravings during the cold winter months. What really makes this recipe special, is the smoked paprika. It gives a very nice, unique taste to it.


Ingredients

1 onion, diced

2 cloves garlic, minced

1 red bell pepper, chopped

2 carrots, cut into chunks

1 small sweet potato, cubed

1 can sweet corn

1 can cooked chickpeas

500 g tomato puree

1 tsp dried thyme

1/2 tsp cayenne pepper

1 1/2 tsp smoked paprika

1/4 tsp ground pepper

1/2 tsp salt (or to taste)


Method

1. Place the carrots in a food processor and pulse until it has the texture of rice.

2. Place the onion, garlic and red bell pepper into a pan. Add 2-3 tbsp water and steam for 4-5 minutes until they soften.

3. Then add all the spices, carrots, sweet potatoes and tomato puree, and cook until the vegetables are soft (about 20 minutes).

4. Finally, add the corn and the chickpeas, and stir it well.

5. Serve it with cooked brown rice.
