Raw Vegan Oil-Free Straberry Cake

I made this oil-free raw vegan strawberry cake many times last year for family events and birthdays, and it has always been a huge success. I haven’t shared the recipe with you yet because I was thinking of publishing a dessert cookbook, but as this won't happen recently due to lack of time, I have decided to make it available to you on my blog. :)


You can use frozen strawberries instead of fresh ones, so you can enjoy this deliciousness out of strawberry season, as well.


The base is made of dates and oats, which can be made in a gluten-free version, as well, or the oats can be replaced with either shredded coconut or nuts.


For the cream, I used agar powder, so it's much lower in fat than traditional vegan desserts, whose cream is usually made from coconut oil.


Ingredients (18 cm springform)


Base

170 g dates

140 g oats


Cream

600 g fresh strawberries

150 g cashews

180 g dates

30 g fresh lemon juice

250 ml plant-based milk

2,5 tsp agar powder


Method

1. For the cream, soak the cashews in water for 5-6 hours. If using dried dates, soak them, too, if using fresh ones, there's no need to it.

2. For the base, grind the oats in a food processor, then add the dates and process them until you get a dough that holds together. Add a few drops of water if it's too dry.

3. Press the dough on the bottom of an 18 cm springform, then place it in the fridge while preparing the cream.

4. For the cream, blend the strawberries, soaked cashews, soft dates, and lemon juice until smooth.

5. Place the plant-based milk and agar powder in a small pot and bring it to boil. Stir it until the agar powder dissolves and the mixture starts to thicken. Then turn off the heat and let it cool for a minute.

6. Turn on the blender with the strawberry mixture again and pour the agar mixture in it while blending.

7. Finally, pour the cream on top of the base. From this point, you'll need to work quickly as the agar sets while cooling down.

8. Gently hit the bottom of the springform against the kitchen surface a few times to get rid of the air bubbles.

9. Place the cake in the fridge until it sets (ca. 3 hours).

10. Decorate it with fresh strawberries.
