Oil-free Indian Chana Masala

Chana Masala is a traditional Indian and Pakistani dish, which has a huge popularity around the world. “Chana” means chickpea and “masala” refers to a blend of spices used in Indian cooking.
This recipe is quick and easy to make. It's a great comfort food than can be eaten with cooked brown rice or naan bread.
Ingredients (2 portions)
250 g cooked chickpeas
1 onion, diced
3 cloves garlic, minced
1 tsp fresh ginger, grated
1 large carrot
1 medium potato (150 g)
1 can diced tomato
2 tbsp tomato paste
100 ml water
1 tsp cumin
1 tsp ground coriander
1 tbsp garam masala
¼ tsp curcuma
¼ ground chili
¼ ground cinnamon
¼ ground pepper
3/4 tsp salt
1 tbsp date paste
For serving (optional)
Fresh koriander
Fresh lemon juice
Method
Sauté the diced onion with 2-3 tbsp water until soft.
In the mean time, cube the potato and chop the carrot into large pieces. Place the carrot in a food processor and pulse until it has the texture of rice.
Once the onion has softened, add all the ingredients excluding the cooked chickpeas.
Cook under lid until the potato becomes soft, then add the cooked chickpeas and cook for 10 more minutes.
You can add some fresh coriander and/or fresh lemon juice to taste before serving.
Serve with cooked brown rice or naan bread.
